I’m a mom of a curious little girl named Sophia and a feisty little boy named Trent. About 3 months after I had Sophia (at the age of 29), I was diagnosed with celiac disease. I had suffered through nearly 30 years of chronic stomach pain and unexplainable illnesses, and *poof* just like that, it all made sense. All of the gluten-containing foods and drinks that I’d been consuming my entire life – namely bread & pasta – were turning my body against itself and literally attacking my intestines on a daily basis.
The days, weeks, and months following my diagnoses were filled with relief, confusion, and A LOT of research. I soon learned how to examine food and ingredient lists in painstaking detail to avoid the dreaded gluten in any of its many names and forms. Eating out has become more of a chore – and always a risk with the threat of cross-contamination. Many of my favorite recipes had to be adapted to use gluten free substitutes.
But you know what? I’ve finally reached a place where I am confident in navigating through this gluten-filled world. I have a gluten free kitchen – and surprisingly it isn’t lacking in any variety or deliciousness of foods. I continue to discover AMAZING gluten free brands and recipes that my kids LOVE.
